How To Make Banana Oat Muffins

Banana Oat Muffins

When I tell you this is the most simplest recipe Ive made, it is THE SIMPLEST. These banana oat muffins has become the ideal on the go breakfast option for myself as well as my family. As busy as the mornings are, these muffins can easily be tucked into the kids school lunchboxes or eaten as afternoon snacks when they bust through the doors! Additionally, both my children are into sports and fueling them with energy right before a game is an extra plus.

No extra sugar, no flour, and just three ingredients. Ripe bananas, old fashioned rolled oats, and vanilla is all that’s needed to complete this delicious healthy snack. When using ripe bananas, they provide enough sweetness where no extra sugar is needed and the vanilla gives it that extra oomph for that great taste.

Making banana oat muffins

Now, let’s chat about the fun part – toppings/mix-ins. The options are endless and customizable to your own taste. I opted to make three versions of these banana oat muffins: strawberry, raisin, and apple. Next time, the kids asked to try chocolate and coconut version and I can’t blame them.

Variety of Banana Oat Muffins

Because the base of these muffins are bananas, there will be no rising when placed in the oven for baking. PRO TIP: No need to use paper baking cups. They will only stick and be hard to peel off when done. Using baking spray directly to the muffin pan will work just fine and will allow the muffins to slide right out.

Ingredients

(NOTE: This recipe makes 24)

  • 4 Large (RIPE) bananas
  • 3 Cups of old fashioned rolled oats
  • 1 tsp of Vanilla Extract
  • Your choice of toppings/mix-ins (optional)

How To:

  • Preheat your oven to 350 degrees and generously apply baking spray to your muffin pan.
  • In a mixing bowl, smash ripe bananas until there aren’t any large pieces. Add in oats and vanilla. Mix well.
  • If including any of your favorite mix ins, make sure to portion out the oat/banana mix first. Add in your mix-in choice and ensure all is combined well.
  • Once mixed, add mixture to muffin pan. You can add your topping of choice as well.
  • Bake for 15-18 mins and allow a cool down of 5 minutes.
  • Any leftovers, store in the refrigerator for up to 5 days.
